You know I like a salad. So my bentos are not all pretty, but they are yummy-looking enough for the blog πŸ™‚

This bento-salad consists of lettuce, onion, pepper, cucumber, carrot and paprika Quorn chicken-style pieces.

I love a bit of Quorn.

Bento (No. 83)

Nice and healthy bento for a warm (almost) summer day.

This bento contains ham salad sandwiches on seedy bread, quorn chicken style nuggets tucked down the side, a multitude of fresh fruit, unsalted nuts (in the pot) and a cereal bar.

I know this glorious weather is not going to last but pretty please van we have dry weather for june?

Bento No.39

 

 

I’ll be quick again, as it’s a fasting day and food pics make me hungry!!

I had this Bento the other week (when I made them more pretty) and it included some yummy snacks!! The snacks were sliced veg (radishes and cucumber) with ham wrapped dates. I’ve definitely got more into dates. I don’t love them yet, but I do like them πŸ™‚ The main part of the bento was leftover roasted mixed veg (pepper and onion in the yellow cupcake case and sweet potato in the blue cupcake case), leftover veggie burger bake (recipe below) with more cheese on top and chicken flavour noodles with sliced radish on top.

It’s not the healthiest bento I’ve made recently, but it is so colourful and shows off the use of the silicon cupcake cases!

So, here’s how to do a Quorn burger bake. I love putting Quron in bentos, as there is so much less of Β a worry about it not being safe at room temperature (than meat).

Quorn Burger Bake

Ingredients:

x1 pack of Quorn mince (or any other meat free mince)

x2/3 medium onions (or however much you like)

x4 whole eggs

Basil (to taste)

Oregano (to taste)

Parsley (to taste)

Cayenne Pepper (to taste)

Salt and Pepper (to taste)

Olive oil (or any cooking oil) for cooking

Cheese (any) for sprinkling on top

Method:

– Dice onions finely

– Mix with herbs (I put to taste on the ingredients list because I don’t measure everything out when I make things), salt and pepper and Quorn mince

– Whisk the eggs together and mix in with the Quorn mince mix

– Oil the inside of an oven proof dish

– Pour/put burger mix into oven proof dish and bake for 25-30 mins (I bake it at gas mark 7)

– In the last 5 minutes of baking, sprinkle a generous amount of cheese on the top of the bake and put back in the oven

Notes:

I do not pre-cook the mince mix, both for ease (makes it so much quicker and so much less washing up!), and because the mince mix will cook through fine in the time in the oven.

This idea would also work with added sauces, such as BBQ sauce, hot sauce, or sweet chilli sauce (mixed in before baking). I will be adding sauce to it before baking next time, as it would prevent the need for adding sauce to it when eating!

Bento No.31

 

 

Noodle overload!

Noodles definitely have to be on of my go-to foods if I am in a bento panic in the morning. With this bento, I had the roasted veg and veggie mince leftover from the night before, but alas, it was not enough for a man-sized bento!!

So, out came the noodles! With some pretty sliced radishes on top πŸ™‚

Recap of goals

As Christmas has been and gone, it is only right that I recap on myΒ Goals for Christmas!

1.Β Start up sessions with my personal trainer againΒ – Done πŸ˜€ I have a PT session every week πŸ™‚
2. Beat my current record for a 2K treadmill run – I wanted to beat 12 minutes, which I didn’t, but I have been getting better and better and my fastest time is now 13.37 πŸ™‚ If I keep it up, I’ll be below 12 minutes in no time πŸ˜‰ (haha).
3. Continue with encouraging my close family to eat healthier – Both my family and I have been really good with eating healthy. The main thing I’ve found with encouraging people to eat healthier is portion size. I also have been making them eat more Quorn πŸ˜› If I cook, I don’t really enjoy cooking meat, it takes too long 😦
4. Increase the amount of dinner and lunch prep I do – I did some, and I still used fresh stuff too! It is definitely something I will keep working on πŸ™‚
5. Reach my savings goal – Definitely πŸ˜€ I’m so happy with my savings so far! I love un-openable pots! So easy to save when you can’t reach the stuff inside!
6. Make/bake most, if not all of people’s christmas presents this year – Ta da! Did so much baking, I almost ate solely biscuits and cakes over Christmas! They were so good though, shortbread, cupcakes, cookies, fudge (my mums), yummy!
7. Read more – Yes, and no. I got some cool books for Christmas – ones on cupcakes πŸ™‚ allotments and gardening, and a Jamie Oliver Cookbook!!
8. Update my blog more frequently – What do you guys think?? I think (part from Christmas) I was bang on form πŸ™‚ I am going to keep the posting up, and hope you guys like it πŸ˜€
9. Organise my room – I didn’t over Christmas, but last weekend, I tidied a whole half of my room! It’s so clutter free!!…Except the cluttered half πŸ˜›
10. Be optimistic – I’m better, but I could be better πŸ˜› Ok, I’m amazing πŸ˜€ haha.

Bento No.13

How are we all this fine day? It is so difficult to not moan when my horrible cold still hasn’t gone 😦 At least my Bento is smiling!

Today, I had leftover smiley faces (BEST EVER!) that the bf cooked, leftover quorn mince quick stir fry and salad. I also mixed up some wasabi mayo to go with the salad and smily faces πŸ˜€

It was so yummy! I was lucky I hadn’t chowed down on it before I remembered to take a picture! The bf had exactly the same, but his was in a proper bento box :S bad me I know!

Bento improvisation!

I can’t really count this as a Bento post, as it is only a picture of a snack Bento that accompanied soup and cheese toasties, but it included an ingenious idea from moi!!

This snack Bento included sliced cucumber, cherry tomatoes, sliced Quorn sticky fillet and a ‘cup’ of nuts. Have you noticed the cool idea yet? Well, I was round the BF’s, so I had limited Bento equipment (limited to only the Bento boxes D: but I needed something to put some nuts in. Hence the ‘cup.’ It is actually an old scoop for his protein powder stuff, and it was just sitting in the cutlery drawer, just waiting for a new purpose. Ta Da! Works just as well, if not better, than a silicon cupcake case!!!

How do you like my idea? Do you use anything different in your bentos that has been re-purposed from something else??

Bento No.4

This isn’t todays Bento, it’s actually from last week. I thought I’d share it with you, even though it’s nothing cute, it contains yummy Japanese inspired food πŸ™‚

I used my Aladdin Bento box πŸ˜€ and I had rice noodles, quorn mince stir fry with veg, sliced tomato, and umeboshi and sweet cucumber pickle.

The quorn mince stir fry was seasoned with sushi vinegar, soy sauce, garlic and ginger πŸ™‚ and had added shelled hemp in, for added protein.

Oooh I like Bento Posts!! I think I need to start experimenting with kyaraben bentos (picture bentos)soon, I’ve just got to get my art groove on πŸ˜›

What do you reckon would be a nice easy kyarabenΒ bento theme to start off with?

First Recipe!!

Right, I would love to Blog every day, but then I think I’d get addicted to it :S but, at least once a week for now should contain my cravings πŸ˜›

Firstly, My birthday was AMAZING πŸ˜€ I ate loads of sushi, donuts and smoothies and got so many bento and hello kitty related presents πŸ˜€ so exciting!!! I still don’t feel any older than 20 though, 21 doesn’t seem that more interesting yet.

Secondly, FIRST RECIPE!!! I made a super pasta dish the other week and I had to tell you about it.

It was so yummy and healthy(ish)

*Just a quick heads up, I usually make healthy recipes and really enjoy making things from scratch with all fresh ingredients πŸ™‚ yay!

So the recipes is as follows:

Pasta (I used one standard bag that you get in the supermarket) – you could use brown pasta

1 packet of haloumi cheese

2 medium sized onions

2 cloves of garlic

Quorn Chicken style pieces (however much you want

Large handful of chopped frozen veg

Olive oil

Method:

Boil the pasta as you would normally, adding the frozen veg to the pasta pot halfway through cooking.

While that was cooking, I chopped the onion and garlic very finely and fried them with a bit of olive oil until the onions were transparent.

I then added the quorn chicken style pieces to the frying pan and cooked them through.

I chopped the haloumi into bite sized thin pieces and added them to the frying pan once the quorn was cooked (as you don’t want it to burn, just get a bit crispy and yummy)

When everything was cooked, I drained the pasta and veg and added the onions, garlic, quorn and haloumi with another small drizzle of olive oil.

Ta da! I then stuffed my face with it, it was so good!!!

Try it, seriously, even if you’re not a veggie (I’m not actually, I just love Quorn :))
