Bento No.5

I had such a yummy Bento today, with the most easiest maki rolls ever!!

I am so proud of myself!! I made sushi rice last night, with a simple soy, sesame and ginger stir fry (with veg and chicken), but of course I made enough rice for todays bentos 😀

What I did with the leftover rice is the genius thing 😉

I love making sushi, and my partner loves cucumber maki. But, I am a little bit impatient when it comes to rolling the damn rice and cucumber up!!! And I don’t have a knife that is good/sharp enough to slice the maki well.

Back to the genius that is me.

I used a cookie cutter/sandwich cutter to mould the rice. I had a small round cutter, that was quite tall (for maki) but so easy to use!

I stuffed the rice and cucumber slices in the cookie cutter while it was placed on a chopping board, squishing the rice down to make it compact, then i gently pushed the nori-less maki out. Then I wrapped it in cut strips of nori 😀 ta da! Slightly large, but still gorgeous cucumber maki!!

I feel so amazing because I crave these things almost daily and mow I have a super easy solution!!

Giant Maki!!

There wasn’t much room for anything else in my bento box with all those maki! The lunch doesn’t look like much but remember those maki are twice as tall as normal maki, and at least 50% wider 🙂 yummy!

Have you found new ways of creating things (not just food) that is completely different from how it was ‘meant’ to be done?


Bored of the same old sauce?

Stuck with using the same canned or tinned sauces on pasta and other dishes?

Bored of tomato, cheese or nothing at all?

Open up new ways of thinking:

– Use tinned soups (mushroom, vegetable, oxtail)

– Puree Vegetables (butternut squash, pumpkin, even kale!)

– Egg! Make a giant pasta frittata by adding eggs to your dish and baking!!

I love using new and different things for meals. I get bored so easily!!

Let me know if any of you guys have tried anything new if you were bored of the same old thing!

Peanut Cookies

I can cross off a recipe from my Food Bucket List!!
I made Peanut Butter Cookies the other day. I was going to use the basic 3-ingredient recipe (Sugar, Peanut Butter and Egg) but I decided that was far to much sugar for human consumption, and I adapted it.

100g white sugar
100g crunchy peanut butter
50g flax seed (or flax seed mix)
50g rolled oats
1 egg
Mix all ingredients, apart from the egg, together, until well combined.
Add the egg and mix again.
Using a teaspoon, measure out small balls of dough and shape them into small patties.
Bake in the oven at Gas mark 6 for around 20 minutes, or until golden brown (browner than they were to start with)
This mix makes about 30 cookies
Well, my family and I ate them far to quick to be photographed, so I apologise for that 😛 They were yummy. Just the perfect amount of sweetness, and so peanutty!! I would always add the oats and flax seed, as it makes me feel a little healthier nomming on these 🙂 and it adds more texture. The original recipe called for 200g sugar!! So too much!!
Next time I make them (which I will be doing again) I will endeavour to take a photo.

Almond Milk

Pure and beautifully simple.

My favourite brand of Almond Milk

Ways I use it:

  • In smoothies
  • On cereal
  • In porridge/oats
  • In a glass
  • In recipes (sauces, etc)
  • Everywhere 🙂

Why it is so good for you:

  • Compared to soy and rice milk, almond milk has the highest concentrations of vitamins and minerals.
  • Low in fat and calories
  • High in Antioxidants
  • Contains no cholesterol and no saturated fats
  • High in Omega-3 fatty acids
  • Alternative to Cows milk (for those allergic to lactose) and tastes better than rice or soy milk (in my opinion)

I still drink soy milk, and, although I’m not lactose intolerant, I really do prefer almond milk 🙂

Autumn Fitness

I had my first Personal Fitness session in 4 months last night.


Firstly, I am so tired! Everything hurts! I forgot that before fitness comes just a wee bit of pain. But, it is the second point I am going to tell you, that really made the difference to me.


…I could do it.

I could run 2k, row 1km, do a reasonable amount of man press-ups in a minute and a great amount of squat jumps in a minute.

Ok, I have been back to the gym since my op, but not undertaken a significant amount of tasks, especially running. But I could do it. Even my PT trainer was impressed 😀

Ok, I have a long way to go to reach my fitness goals before Christmas. They are, however, very achievable. I am so excited about that 🙂

So, I have achieved Number 1 of my Goals For Christmas:

1. Start up sessions with my personal trainer again

Easy peasy 🙂

Pumpkin Carving

I forgot how GOOD roasted pumpkin is!

I am SO buying another pumpkin before Halloween!! Bring on some more carving!! And more noms!!

Bento No.4

This isn’t todays Bento, it’s actually from last week. I thought I’d share it with you, even though it’s nothing cute, it contains yummy Japanese inspired food 🙂


I used my Aladdin Bento box 😀 and I had rice noodles, quorn mince stir fry with veg, sliced tomato, and umeboshi and sweet cucumber pickle.

The quorn mince stir fry was seasoned with sushi vinegar, soy sauce, garlic and ginger 🙂 and had added shelled hemp in, for added protein.

Oooh I like Bento Posts!! I think I need to start experimenting with kyaraben bentos (picture bentos)soon, I’ve just got to get my art groove on 😛

What do you reckon would be a nice easy kyaraben bento theme to start off with?

Bento No.3

Lets have a Bento Post to start off the week 🙂

Here is todays Bento:


Today, I didn’t use any of my Bento boxes D: shock horror!

But, I had a YUMMY! Bento 😀

I had 2 brown rice star shaped onigiri (and extra brown rice) with soy sauce in fish container.
Leftover white rice and roasted pumpkin.
All on a bed of lettuce with sushi pickled ginger, umeboshi and sliced avocado.
For snacks and pudding is Half a pomegranate, and orange/satsuma and a cupcake case full of cacao nib no-egg cookie dough 🙂
I feel like I’ve spoilt myself today!!
Can’t wait to do it again 😀

Opinions and Healthy Eating

I am very opinionated, on many many things. One of such things, is a large percentage of societies view on what is ‘healthy.’
Begin the rant…
Skinny is NOT healthy.
Being fat is NOT a disease.
Just eating less will NOT help you to be healthier.
Weight loss alone is NOT the path to a healthy lifestyle.
Being a vegetarian or stopping eating a lot of meat will NOT turn you into a sickly person.
Fat is not sexy, but neither is skinny.
Stop moaning!!!
Both today’s society and I, are very much the same. We moan, complain, and blame things on other people.
So, I will be the better person, and give some advice to people that may want to start the path towards a more healthy lifestyle.
The following is adapted from many posts I have seen on eating healthier.

5 ways to eat healthier

1. Start small. If you swear off chocolate, caffeine, fried foods, sugar and alcohol the first day of your healthier life, you are setting yourself up for failure. Instead, start your new lifestyle by giving up something you don’t really care about anyway. For example, stop putting sugar in your coffee or tea, and you will save yourself unneeded sugars on a daily basis. Perhaps you have never had a sweet tooth- resolve to give up dessert after dinner completely, and you probably won’t even miss it! Always thought fast food was kind of gross? Convince yourself it’s really gross (it is) and never go back. Find an easy victory to start your new healthy habits with, and then pat yourself on the back.

2. Plan ahead. This step is crucial but often overlooked because it requires effort and forethought. When you don’t plan ahead for meals, you wind up ordering a take-away, or getting a pizza out the freezer. Just as you must plan for success, you must plan for a healthy lifestyle, because the “default” mode in the Western world is not one of healthy eating. If you pay no mind to what you eat, you will wind up eating garbage. You must carve out time to sit down and plan your meals for the week before you go shopping; while you don’t have to write out every ingredient, you do need to know whether or not you have the groceries to create nutritious meals.

3. Stick to your list at the supermarket. You can’t eat junk food if you don’t buy it in the first place. Resolve never to go food shopping when you are hungry, angry or sad, and realise that many unhealthy food purchases stem from needs and desires other than hunger. You have already planned out your meals, so stick to your list throughout the store in order to foil the grocer’s psychological tricks to try and make you buy more. Six hundred cookies for £6 is NOT a deal in the long run. Before you check out, stop and go over everything in your trolley to make sure no impulse purchases of junk food have snuck in.

4. Eat foods you love. Eating is one of the great pleasures in life, and eating healthy does not have to be about denying yourself your favorite foods in favor of those you dislike. If you hate celery, forget it! Love cheese but not the calorie count? Learn to enjoy stronger, sharper cheeses and have just a bite instead of slathering a handful of cheese over your lunch salad. Look at your new healthy lifestyle as a positive new choice, and you will feel inspired on your new adventure instead of deprived of all the foods you are giving up.

5. Get rid of the blame. Did you slip and eat a giant slice of chocolate cake for breakfast? Instead of pummeling yourself for failing and feeling guilty, recognize you made an unhealthy choice and then move on. No food is inherently good or bad, and beating up on yourself for slipping up will only create unneeded stress. What you put into your body and how you deal with stress are the two biggest factors that determine your current and future health. Resolve to eat healthy and chill out, and you will increase the quality and quantity of your days.

Even I do not stick to all 5, and my family praise me for being extremely healthy. I would love to tell everyone in the world that has said that they cannot do something, that they just have to believe and TRY. You will not achieve anything by not trying.
